Eungkot Paya is a traditional Acehnese sour and spicy curry made from wild freshwater swamp fish like snakehead murrel (*haruan*), climbing perch (*krueb*), or local catfish (*seungko*). The fish is cooked with toasted grated coconut (*u neuheul*), sour bamboo shoots, taro, young cassava leaves, and sun-dried bilimbi (*asam sunti*). Its flavor is highly exotic, offering a blend of sourness, spice, and toasted coconut aromas.
