Ayam Tangkap is a spiced fried chicken dish from Aceh Besar served under a mountain of crispy, deep-fried green leaves. The chicken is cut into small pieces, marinated with garlic, ginger, turmeric, and tamarind water, and then fried alongside aromatic leaves like fresh pandan leaves, *temurui* (curry leaves), and whole green chilies. The crispy fried leaves are highly edible and delicious when paired with warm rice.
