Asam Udeung, is a typical Acehnese condiment highly sought after for its fresh and addictive taste. It is called cannabis chili not because it uses marijuana leaves in its recipe, but because its superb delicacy makes anyone who tries it instantly hooked, wanting to eat more and more rice.
The authentic recipe of Asam Udeung is very simple but demands the freshest ingredients. It is made of small freshwater or marine prawns boiled briefly until orange, then coarsely ground with fresh starfruit (belimbing wuluh) for a sharp sourness, bird's eye chilies for heat, raw shallots, finely sliced young lemongrass stalks, fresh lime leaves, salt, a pinch of sugar, and drizzled with hot coconut oil.
The wet texture from the starfruit juice and the tenderness of the prawns create a natural umami flavor without MSG. In traditional warkops and eateries in Aceh, this sambal is the loyal companion to hot Ayam Tangkap or Keumamah, served alongside steaming rice.
