Kuah Pliek U is the most representative traditional culinary masterpiece of Aceh, reflecting local wisdom in food preservation and rich spice blending. This coconut milk-based soup has as its main base Pliek U, which is the coconut dregs leftover from the traditional coconut oil-making process that has been dried and fermented for days to release a distinct sour-savory aroma.
Traditionally, Kuah Pliek U is cooked with various fresh tropical vegetables cut into small pieces, such as melinjo leaves, melinjo fruits, long beans, young papaya, young jackfruit, torch ginger, bamboo shoots, and fresh prawns to enhance the flavor. The fine seasoning of this soup uses typical Acehnese spices including cayenne pepper, shallots, garlic, coriander, cumin, ginger, turmeric, asam sunti (dried salted starfruit), and abundant lime leaves and lemongrass.
Culturally, cooking Kuah Pliek U together in a large iron cauldron (beulangong) has been a tight tradition in every custom feast, harvest ceremony, and large family gathering in Acehnese villages. Its savory, spicy, and refreshing sour taste makes it a must-try culinary experience.
